Mother's Day cake idea: Healthy Carrot Cake

Have you ever had the problem of not knowing what cake to give to your mom and you're tired of the same ones? Well you're reading the right post.

Today I'll share with you my Carrot Cake recipe. 

INGREDIENTS:

-256 gr of all purpose flour (aproximately 2 cups)
-5 medium carrots
-2 eggs
-2 tsp of baking soda
-A handfull of chopped wallnuts (can vary as your taste)
-1 tsp of cinnamon
-A pinch of salt
-Lemon peal
-1 or 2 tbsp of agaven sirup (can put sugar too)
-150 ml of soymilk

PREPARATION:

-Peel and grate thinly the carrots.




-Mix flour, wallnuts, baking powder together
-Mix Milk, agaven sirup, carrots, salt, cinnamon, lemon peal and eggs together
-When well mixed combine the two and mix well
-Preheat oven at 180°C



 -Pour in a cake tray

-Cook in the oven. Once in a while check with a toothpick and if it comes clear then it's ready!


AND YOUR'RE DONE!







-Cut and serve

How easy was that? When my mom knew I was making her a cake she was bragging it to all her friends xD She really liked it. It really smelled very good because of the cinnamon and the lemon. 
It's soft and crunchy at the same time :)

D.I.Y- Vegan Banana Pancakes! (+ Pancake with Caramel filling)

Have you ever felt the time when you really wanted to eat something you didn't eat for a long time and you search for the recipe and eventually see that you can't eat it because you're vegan?
Well you came across the right post. Today I'll be sharing with you guys my recipe for Vegan Pancakes. Shall we start?

INGREDIENTS: (around 10+ servings)
-1 banana (if you don't like banana you can use coconut butter)
-1 cup of soy/almond milk
-200 ml of all purpose flour
-2 tsp of baking powder
-1 tsp of vanilla extract (you can add lemon peel. I personally think it's better but didn't have some)
-1 pinch of salt

STEPS:

-First of all take a banana and mash it or blend it until smooth.


-Add the milk, mix well, then add the flour. If you see that the mixture is too thick, then add some more milk. It shouldn't bee too liquid nor too thick.

-At last add the baking powder, vanilla extract and salt. Mix well. Baking powder will make our pancakes sponge like, very fluffy
-Heat a pan and oil it (you don't have to do it but it's to make sure the pancake won't stick to the pan and burn)
-When the pan is hot take a large spoon and scoop some mixture and cook it
-Try to make small pancakes but if you prefer you can make them bigger. To understand if it's ready to turn it you have to look at the bubbles it forms. Once you lace the mixture on the pan you'll see some bubbles popping and reforming. Once you see the bobbles stopped popping and you see some holes it's time to turn them. Take a spatula and turn them/it. Once you turned it see if it gets off the pan by scraping it off. If so your pancake is ready to put on a plate


-Use all the mixture and....You're done!
Serve on a plate with some maypole syrup or jam. Any topping you like... and ENJOY!

























ALTERNATIVE:
I made an alternative to a simple plane pancake. If you're curious then keep on reading! :D

Since I had quite a lot of mixture for just one person I tried doing something new. I did a pancake, caramel sandwich. It's just basically a pancake with caramel inside. Here is how you can make it:

-Instead of placing the mixture on the pan, then flipping it. You simply want to place some mixture on the pan, get your caramel (by caramel I'm talking about caramel cream) and place it at the center of the pancake.
-After you see the bottom one is cooked add a second layer, a "lid".
-Pour a second spoon of mixture right on top of the pancake and turn it.
-After it's cooked you now have a Pancake Sandwich :D

Don't they look exactly like "real" pancakes??

I think this is really a great alternative to Simple Pancake and it's really good because you don't even have to add a topping! You have it all inside.

Today I told you two recipes using the same ingredients. When I did the pancakes I was so surprised how fluffy they were. I thought since I didn't use any egg they could come flat, but using the baking powder it made them super fluffy. I kept on touching them. So fluffy xD They were really tasty and delicious. I ate them plane but you can eat them with anything.( I was so surprised in how many recipes banana fits perfectly. I'm starting to think that banana is my main ingredient in a lot of my daily food!)
One thing, you want to make sure you eat them the same day if not they'll harden and they won't be as good as before.

D.I.Y- Green Smoothie (green powder)

Are you tired or out of green veggies? But still you want to have a nice fresh, healthy and fast Green Smothie? Well you came across the right post :D
Today I'll be introducing a new ingredient I recently came across these days. What I'm talking about is: "Wheatgrass Powder"What this is it's basically wheatgrass in a powder form. If you didn't know wheatgrass is very healthy for you. I know you may think that this is what cats or dogs eat but it contains minerals, amino acids, vitamins, clorophyll, and enzymes. They even say it has curative benefits(?) It's even gluten-free so no worry!
Wheatgrass is a good source of potassium, a very good source of dietary fiber, vitamin A, vitamin C, vitamin E (alpha tocopherol), vitamin K, thiamin, riboflavin, niacin, vitamin B6, pantothenic acid, iron, zinc, copper, manganese and selenium, and has negligible amount of protein (less than one gram per 28 grams). Adding other foods with complementary amino acid profiles to this food may yield a more complete protein source and improve the quality of some types of restrictive diets.
So it's a healthy thing to integrate in your daily smoothie or diets.
You can even grow it on your own and juice it or buy it in a powder form like I did. Really cheap!

After all this long information lets go to the actual recipe for a nice Green Smoothie! ^_^

INGREDIENTS:
(1 person)
-1 banana
-half a cup of milk (this time I used hazlenut "milk")
-1 tsp of wheatgrass powder
(Optional)
-1 tbsp chia seeds

LETS GET STARTED!
-First of all, in a blender, combine the banana, milk and wheatgrass



-Blend untill smooth

-Serve and enjoy

(optional)
-Add the chia seeds




You're Done!

Wasn't this really easy? It even had a few ingredients! Really tasty and fast too! 
Doesn't the color look so pretty?
I really like the taste of this because it's not too sweet or too herby. It's just tasty at the right point xD
I enjoyed making it even tho it took like less then 5 minutes to do it. 
In the future I'll try to experiment different tastes with the wheatgrass powder combining different ingredients.

D.I.Y- Granola Recipe

Are you out of celerals in the morning or you just want to eat something healthy and fast with your milk or yougurt? Well you are reading the right post.
Today I'll be sharing with you my granola recipe. You can simply buy granola at the supermarket but you don't get to choose what it goes inside! Lets get started!

INGREDIENTS:
(Depending on how much you want to make the quantity may change)
-100g oats
-150g puffed rice
-50g sesame seed
-60g water
-100g sugar
-1 or 2 tbsp maple syrup (can use honey)
(you can add any other seeds or even dried fruits, as your taste)

Lets Start:
-Preheat the oven to 160 C°
-In a pan add water, sugar and maple syrup. Heat it untill it melts.
-Conbine oats, puffed rice, sesame seeds... together in a bowl and mix.
-After the sugar melted wait for it to cool and then add it to the bowl and mix well
-Lay ,on a larg oven pan, parchment paper and pour the mixture on the pan. Spread well.
-Cook for 15 mins
-After mix it well and lower the temperature to 150 C° and cook for 10 mins
-When the granola will have a nice honey color it'll be ready.
-Take it out and let it cool.
You are done!

Wasn't it easy? You can make this while cooking the banana bread or any other things in the oven :D
You can keep it in a jar and it'll last a long time.
An easy, fast, healthy recipe.
I like to eat mine in my yougurt or simply by it's self. It's just so tasty and delicious! :P

 I didn't have a simple jar so I had to use one already used....
 Doesn't it look so good??? YUM. I feel like having some now :P

D.I.Y- Vegan Banana Bread Recipe

Are you out of ideas for a nice healthy, vegan and fast breakfast? Here is a quick recipe for you.
Today I was really into baking and cooking so, searching vegan on YT I found out about banana bread. It seems like it's really popular among who wants to stay healthy and all. I searched a lot and ended up making up mine. It may sound random but it turned out VERY DELICIOUS. I'm not even joking. It was really good. So lets get started

INGREDIENTS:
-4 ripe bananas
-370g all purpose flour (you can useother types. I used buckwheat flour)
-125g sugar
-125ml of milk (you can use almond, soy milk. I used banana soy milk. YUM)
-1tbsp of oil (you can use coconut oil... I used sesame oil)
-1.5 tsp baking powder
-1/2 tsp baking soda
-Pinch of salt
-3tsp cinnamon

LETS STRAT:
-Preheat the oven to 180C°
-Get a bread pan on a cake pan. Grease it with oil to prevent it to stick.
-Peel the bananas and mash them in a bowl.
-After mashing the bananas add in the bowl oil, sugar, cinnamon and mix well. (you can mix untill smooth with a blender or just leave some chunks likt I did)
-After mixing add flour, milk, baking powder and baking soda.
-After mixing it well pour the mixture in the pan and bake for 30-40 + mins (for me it took more than 40 mins. Just keep checking the bread with a toothpick.)
-When baked, take it out and you're done!!!



This was pretty easy right? You can eat it for breakfast, cold, worm, in the milk. It's just awesome and DELICIOUS. I'm enjoying it to much in the morning. Can't wait to eat it tomorrow. This bread will last you a week maybe less (if you don't eat it before xD) Keep it in a container or in a cloth so it won't harden. (not sure if it will)

I'm so happy of the result. It wasn't even THAT hard to make! Really easy, fast, healthy food.
What else would you want. If you eat it after baked I can say that it's the BEST. Even the next day it still tastes really good!

D.I.Y.- Everyday Morning smoothie/ healthy drink (matcha and banana ver.)

This morning I decided to add in my morning breakfast a healthy smoothie/drink. I wanted to share with you my recipe.

WHAT YOU'LL NEED:
-1 or half frozen banana
(I used half for one portion but you can add 1 whole banana if you want your smoothie to be nice and creamy)
-Half a cup of Vanilla Soy milk (you can use cow milk, almond milk, soy milk...)
-Honey (or any other sweetner)
-1 or 2 tbsp of matcha powder (you can use 1 tbsp if youy don't want it too flavoured)
(or any other fruits or berries such as strawberries, blueberries, raspberries... depends on what flavour you want it)
-Blender
OPTIONAL:
-2-3 tsp Chia seeds

LETS START:
-First of all peel, cut and put in a container/bag 1 banana and put it in the freezer.
-After 2-4 hours (or better overnight) take it out of the freezer.

Prepairing the matcha powder. Put the matcha powder in a cup or a bowl and mix it with warm water (the same amount as the matcha powder) untill it's smooth.
 

















Add the banana, Vanilla soy milk, matcha and honey in the blender. Blend untill smooth

Ready to serve
 
You can eather leave it like this or add ice cubs
I gave it a little twist and added chia seeds.

OPTIONAL:
After pouring in a glass/cup add 2-3 tsp of chia seeds (the day before I added the chia seeds to water so they would make the jelly stuff and left it overnight but it's better to add them dry) 

You are done! :D
Ready to drink. the purpose of the Banana is to give it that creamy texture and adding Chia seeds makes it even better and makes you feel full and it's really good for your body. It's rich in fiber and omega-3. The cool thing of Chia seeds is that if you leave them in liquid they will make a jelly thing arround them. Chia seeds actually don't taste of anything but it's a good way of making healthy pudding.
